Happy Monday! Colten here.
I hope you enjoyed the Easter Egg hunt on Saturday. Between the morning and evening hunts, I had no idea how fast 70,000 eggs could disappear. My wife volunteered to set up and clean up afterwards, and she wanted me to give a shoutout to the teenagers who helped her team clean up all the eggshells after the evening event. Whoever you are, thank you so much!
This week is a bit lighter in content, but let’s jump in.

CIVIC HIGHLIGHTS
Restaurant update: Four spots taking shape at City Center
Four restaurants are under construction in the City Center cluster on Pony Express Parkway near City Hall: Panda Express, Costa Vida, Papa Murphy's, and Melty (a gourmet grilled cheese restaurant; there’s one in Lehi). All four are expected to open by mid-year 2026, though no firm grand opening dates have been set yet.
Combined with the Smith's Marketplace and Lowe's approval we covered last week, we’re looking at having several more food options right here in Eagle Mountain.

The Eagle's View: March edition
The city released its monthly newsletter covering economic development, city projects, and local governance. If you don't already get it, it's a good companion to what we cover here. Read and subscribe on the city's website.
